Discoloration in Mayonnaise

Hi Professionals,

What can i do to address discoloration in mayonnaise after 4month production. It discolored rapidly from off white or white to brown.

Tell us about its ingredient composition and how do you mix it?

It is a basic ingredients oil, water, emulsifier/stablizer system ( egg yolk, Xanthan gum, modified starch) , acidity, antioxidants and preservatives (Edta, sorbate, benzoate)

Check your mixing vat, it could be contamination from there, try adding egg white

Too much egg yolk specially having deeper color can infkuence that.
