Chili powder covered almonds

Hello, I am trying to coat roasted almonds with a chili powder mix using gum Arabic as a binder.

I am using 1 : 1.5 gum to water ratio and have tried the proportion of 7.5 g of binder to 1 kilo of almonds in a smaller batch though (I think it’s too little btw).

I added the gum to the almonds, after a while added the powder but not enough powder seem to stick.

As a workaround I repeated the process and got a bit more powder on them but still doesn’t seem to work as I would like to achieve this in one layer not several.

I made some research around but find no relevant info on how to do this.

Any pointers or help much appreciated.

I am not looking to get them fully covered, actually would like to achieve something like the final result in just one step of gum and powder, not several.

I was thinking of whether using a denser ratio of gum would help or increasing the amount of gum as in further saturating the almonds.
