Kindly give Solution for choco MILK shake product development
May I know your milk shake components so as to see the causes of the residues at the bottom of the serving glass.
Milk shake are supposed to be served immediately after preparation, to ensure every components are in dispersed state.if you let it stand before serving some residues will be formed..
Before serving the glass bottle should be warmed for 25 degree Celsius .and then filled.
you can add cocoa powder mixture (cocoa powder+sugar+water add as per your requirement and heat this mixture and then leave it for drooping temperature ) in milk shake you can get results
Make a 123 sauce
1 part coco
2 part sugar
3 part water
0.05 parts kappa caragenan
( colour and flavour if reqd)
Disperse all in a blender but add caragenan slowly as to not to lump it
Heat to near boil and cool and refrigerate.
Now u simply have to add a predetermined part of the above sauce to a predetermined part of preferably full fat milk and blend
This milkshake will not show cocoa sedimentation.
